SEASONAL FRENCH CUISINE

Chef Numa Muller draws inspiration from French cuisine, but breaks with convention wherever possible. Classic techniques and seasonal produce form the basis for dishes that are balanced without being predictable.

BISTRONOMY IN DE PIJP

The cuisine plays with contrasts - crispy and creamy, fresh and umami, staying true to the essence of French gastronomy. Guests can choose à la carte or opt for the chef's menu, which consists of an amuse-bouche, several starters, a main course and dessert. There is plenty of choice in vegetarian, fish and meat dishes, always guided by the season.

NUMA MULLER,
OUR CHEF FROM ARLES

Outside the kitchen, Numa is also active as a culinary artist and musician. This creative background is reflected in his menus: familiar in concept, surprising in execution.

With glowing reviews in the Michelin Guide and Gault&Millau, Arles has been a fixture on the Amsterdam gastronomic scene for over ten years and a recognisable address in De Pijp.

THE CAVE

The wine list takes you on a unique journey through France. Classic where appropriate, adventurous where possible. The focus is on the Loire, Burgundy and the south of France around Arles, regions that complement the cuisine perfectly. Expect a mix of French references, lots of natural wines and the occasional orange wine - never ordinary, always full of character.

THE ATMOSPHERE AT ARLES

Located on a quiet street in De Pijp, Arles feels like a place where you naturally linger. The atmosphere is that of a neighbourhood bistro with a contemporary, artistic touch. French hospitality is central: warm, attentive and unaffected. A rhythm that invites you to eat quietly, order another glass and let the evening find its own pace.
